In the Czech countryside every mill pond has an owner, and it is not the miller. The vodník sits in the willows in a green coat that never dries, smoking a pipe, watching the water. He is not a monster in the way the word is usually meant. He keeps a tidy house down there, he goes to market, he is said to be a fair hand at cards. But he collects. When someone goes under, the vodník takes the soul and keeps it in a porcelain cup on his shelf, turned upside down so it cannot get out. The shelf is long. He has been at this for a while.

The Czech word for the one who went under is utopenec. Drowned man. It appears in the old ballads with no softening at all. Karel Jaromír Erben built an entire collection out of these stories, and the water one is the quietly worst of them: a mother, a daughter, a green coat, and a lake that gives nothing back.

And then, because this is Bohemia, the same word turned up on a bar menu. Walk into any hospoda and look for the big glass jar behind the taps. Sausages, onion, peppercorn, bay leaf, all of it sunk in vinegar and left alone to think about what it has done. Those are utopenci. Drowned men. You order one with black bread and a beer and nobody at the table blinks, because a culture that has been telling water stories for a thousand years has earned the right to make lunch out of them. Czech humor works like this. The grave is right there, and so is the next round.
